Far amalgamare gli ingredienti e aggiungere marsala fino a quando&lt;br /&gt;l'impasto risulterà morbido. Lasciare riposare l'impasto coperto per circa&lt;br /&gt;2 ore.Stendere l'impasto a sfoglia dello spessore desiderato, aiutandosi con&lt;br /&gt;la macchina per la pasta. Io ho usato lo spessore numero due. Consiglio di&lt;br /&gt;non fare la sfoglia troppo sottile altrimenti quando si riempiranno i&lt;br /&gt;cannoli si rischierà di romperli. Tagliare dei quadrati con diagonale uguale&lt;br /&gt;alla lunghezza del rullo dei cannoli. Posizionare il rullo all'interno della&lt;br /&gt;sfoglia e piegare un lembo verso l'interno. Far combaciare l'altro lembo&lt;br /&gt;spennellato precedentemente con dell' acqua in modo che faccia da collante e&lt;br /&gt;impedisca in cottura l'apertura della sfoglia. Friggere in abbondante olio o&lt;br /&gt;strutto per qualche secondo, la sfoglia si dorerà in fretta quindi se è la&lt;br /&gt;prima volta consiglio di friggerne uno alla volta. Appena cotto farlo&lt;br /&gt;sgocciolare su un foglio di carta assorbente e sfilare delicatamente il rullo&lt;br /&gt;quando la sfoglia si è raffreddata. I cannoli si possono conservare in un&lt;br /&gt;vassoio per parecchi giorni. I cannoli si devono riempire pochi minuti prima&lt;br /&gt;del consumo altrimenti la sfoglia diventerà molliccia. Se invece si passa&lt;br /&gt;una glassatura di cioccolato fondente all'interno che serve da isolante si&lt;br /&gt;possono farcire anche qualche ora prima. Per la farcitura si setaccia la&lt;br /&gt;ricotta e con l' aiuto di un mestolo si amalgamano delicatamente il resto&lt;br /&gt;degli ingredienti.                                          Mettete le scorze su un tagliere e riducetele                                          a piccole listarelle.&lt;/span&gt;&lt;/p&gt;                                       &lt;p align="justify"&gt;&lt;span style=";font-family:Verdana,Arial,Helvetica,sans-serif;font-size:85%;"  &gt;Raccogliete                                          le listarelle di limone in un barattolo                                          di vetro a chiusura ermetica, versateci                                          sopra tutto il litro di alcol, chiudete                                          e lasciate in infusione per 15 giorni.&lt;/span&gt;&lt;/p&gt;                                       &lt;p align="justify"&gt;&lt;span style=";font-family:Verdana,Arial,Helvetica,sans-serif;font-size:85%;"  &gt;Trascorsi                                          i 15 giorni, preparate lo sciroppo di                                          acqua e zucchero. In un pentolino versate                                          zucchero e acqua contemporaneamente, quindi                                          scaldate a fuoco dolce fino a che lo zucchero                                          non si sarà tutto disciolto. Spegnete                                          e fate raffreddare a temperatura ambiente.&lt;/span&gt;&lt;/p&gt;                                       &lt;p align="justify"&gt;&lt;span style=";font-family:Verdana,Arial,Helvetica,sans-serif;font-size:85%;"  &gt;Unite                                          lo sciroppo all'alcol in infusione mescolando                                          bene. Prendete un secondo recipiente e                                          trasferitevi tutto il liquore filtrandolo                                          con un imbuto rivestito da una garza o                                          da carta filtro.
